Gluten-Free Oven "Fried" Chicken Sandwich

Did someone say “fried chicken”!? This week, I am introducing a #SkinnySwap on the classic fried chicken sandwich! Whether you’re in the mood for something crispy or something savory, this gluten-free, oven-baked, sweet potato bun version satisfies all those cravings! Simple and to the point, this recipe will have you quacking for more!

INGREDIENTS:

Sweet Potato “Bun”:

  • 1 sweet potato

  • 1 pinch of salt & pepper

  • 1 tsp of avocado oil

Chicken Marinade:

  • 1 chicken breast

  • 1 large jar pickle juice

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1 tsp salt & pepper

  • 2 tbsp avocado oil

Chicken Coating:

  • 1/2 cup gluten free, spelt flour bread crumbs

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1 tsp salt & pepper

  • 1 tsp dill seasoning

Topping:

  • Mustard

  • Raw Honey

  • Lettuce

  • Tomato

  • Onion

METHOD:

Sweet Potato “Bun”:

  1. Preheat oven to 425 degrees.

  2. Cut sweet potato lengthwise, to make bun shape.

  3. Lightly coat in avocado oil and top with salt and pepper.

  4. Bake for 20-25 minutes, until tender.

Chicken Marinade:

*While sweet potatoes cook, prepare the chicken

5. With a separate knife, cut chicken breast into sandwich size portions.

6. Add pickle juice, garlic powder, paprika, salt, pepper, and avocado oil to pan.

7. Marinate chicken in pan for at least 30 minutes.

Chicken Coating:

8. Combine spelt flour bread crumbs, garlic powder, paprika, dill season, salt, and pepper in bowl.

9. Coat each piece of chicken in flour mixture.

Final Steps

10. In an oven-safe skillet, pour in half of the marinade and top with 2 tablespoons of avocado oil.

11. Add coated chicken to skillet.

12. Bake for 30 minutes, flipping the chicken halfway through.

13. Top with desired toppings and enjoy!

Notes:

  • Can serve chicken as chicken nuggets.

  • Can sub flour bread crumbs for any preferences.

  • Can sub sweet potato buns for whole wheat buns with no additives.
