Vegan, Gluten-Free DIY Milk Bar Chocolate B'Day Cake Truffles

Let’s talk dessert! We all love MilkBar’s classic B’Day Cake Truffles, but we don’t all love the side effects. Here is a #SkylerSwap of this rich, yet delicious go-to treat!

Yields: 10 Truffles

INGREDIENTS:

Filling

  • 1/2 cup cocoa powder

  • 1 cup hazelnut flour

  • 1/4 cup melted cocoa butter

  • 2-3 tablespoons raw honey or agave nectar (to taste)

  • 1/4 teaspoon sea salt 

  • 1/2 cup yams, mashed

  • 1/4 dark chocolate chips 

  • 1 teaspoon vanilla 

Coating

  • 2 tablespoons raw brown sugar 

  • 2 tablespoon vegan sprinkles 

  • 1 teaspoon melted cocoa butter

  • 2 tablespoon cocoa powder 

  • Pinch of salt 

METHOD:

Dough:

  1. Microwave the yams until soft.

  2. Mash the yams until smooth.

  3. Pulse cocoa powder, hazelnut flour, and sea salt in a food processor, until thoroughly combined.

  4. Add melted ghee (sub cocoa butter for vegas), raw honey, yams, chocolate chips, and vanilla. Pulse all ingredients until a dough forms.

  5. Chill dough for 10 minutes.

Coating:

  1. Pulse all 5 coating ingredients in a food processor, until a sand-like consistency forms.

Final Steps:

  1. Remove the dough from the fridge.

  2. Form dough into balls.

  3. Roll the balls into coating.

  4. Eat and enjoy! Store in a fridge.

Notes:

*Can sub flour for any preferences
