Healthy Rubirosa Tye Dye Pizza

Rubirosa is alllll over Instagram for their yummy thin crust pizza pies. Specifically, their “tye dye” pie that consists of vodka sauce, fresh mozz and pesto sauce. The pizza is delicious, but not something I can eat on the reg if I wan’t to maintain a healthy and nutritious lifestyle. Sooo, we #SkinnySwapped it!

Serving size: 2 personal pies

Ingredients

  • 6 tortillas, whole wheat or whatever your dietary preference calls for

  • 6 thin slices of fresh mozzarella

  • 15 oz of crushed tomatoes

  • 3/4 cup greek yogurt

  • 2 cloves of garlic

  • 1/2 cup vodka

  • 1 cup spinach

  • 1 cup basil

  • half an avocado

  • half a lemon, juiced

  • 1/2 cup olive oil

  • 1/4 cup water

  • Salt and pepper to taste

Method

  1. Preheat oven to 350 degrees F. For the pesto, in a food processor combine basil, spinach, 1/4 cup olive oil, 1/4 cup water, lemon juice and avocado. Blend until smooth.

  2. For the vodka sauce combine 2 tbsp olive oil. crushed tomatoes, greek yogurt, vodka and garlic in a hot skillet. Cook until it reduces down.

  3. For the pizza, take 3 tortillas stacked on top of each other. Put them down in a hot skillet with a tbsp of olive oil in the bottom. Top the pizzas with fresh mozzerella, and both sauces. Pop in the oven for 5 minutes so it all comes together. Enjoy!
