Elote Fried Rice with Mango Salsa

Elote Fried Rice with Mango Salsa

I keep seeing Mexican street corn all over Instagram so I decided to make a healthy play off a not-so-healthy but definitely yummy dish.

Ingredients: 

Mango Salsa

  • 1 red onion

  • 1 mango

  • 1 tomato

  • Cilantro

  • Half of a lime

Shrimp

  • 6 peeled, deveined shrimp

  • 1 tbsp olive oil

Rice

  • 1 tbsp olive oil

  • 1 package of cauliflower rice

  • 1 package of frozen corn

  • 1/2 cup cotija cheese (can substitute feta)

  • 1 avocado

  • 1 tbsp chilli powder

  • 1 tbsp onion powder

  • Salt & pepper to taste

  • Half of a lime

Method: 

  1. Finely dice the mango salsa ingredients and combine in a bowl. Squeeze fresh lime juice on top.

  2. Cook shrimp in a hot skillet until shrimp are pink and no longer glossy.

  3. Add the rice ingredients in the hot skillet and cook until corn is no longer frozen and the cauliflower rice is nice and browned.

  4. Plate and garnish with a little more cotija cheese, cilantro and avocado slices.
