Skinny Chicken Parm Pizza
Quality Italian literally #BrokeTheInternet when they created pizza crust made out of thin breaded chicken and topped it to look like a standard pizza pie. Unfortunately, that deliciousness is breaded, fried and piled high in fatty cheese. So we’re swapping it for a healthier alternative that we can enjoy on a more regular basis. (Plus, for my Celiacs out there this is g-free baby!)
Serving size: 1 pizza
3 1/2 cup ground chicken
3/4 cups flaxseed meal
2 tbsp oregano
salt & pepper to taste
1 cup all natural (no added sugars or chemicals) marinara sauce
4 slices fresh mozzarella cheese
1/4 cup shredded parmesan
1/4 cup fresh basil
Preheat your oven to 375 degrees Fahrenheit and grease a circle cake pan (you can also just form the mixture into a circle with your hands on a normal cookie sheet).
Combine the ground chicken, flaxseed meal, eggs, oregano, salt and pepper in a bowl. Spread the contents out on your greased cake pan to form your thin chicken layer “crust.” Bake in the oven for 1 hour or until cooked.
Top with your marinara sauce, fresh mozzarella cheese, shredded parmesan and fresh basil. Broil on high until cheese is melted. Enjoy!
