DIY Healthier Benihana Fried Rice

DIY Healthier Benihana Fried Rice

If you guys know me, you know I freakin’ love Benihana’s fried rice. So much so, that I need #skinnyswapped it so that I can enjoy at home on the reg. This recipe was made possible thanks to my Ninja Foodi which let’s you crisp the rice without actually frying in oil!

Serving size: 3

  • 2 cups brown rice

  • 2 cups of water

  • 1/2 cup soy sauce

  • 1 cup carrots, diced (frozen or fresh)

  • 1 cup peas (frozen or fresh)

  • Half a white onion

  • 3 cloves of garlic, minced

  • 2 pieces of lean steak, cubed

  • 4 eggs, scrambled.

  • 1 tsp garlic powder

  • 2 tbsp ghee, melted

  • 4 scallions, chopped

  • 1 tbsp sesame seeds (optional)

  • 1/2 lemon (optional)

  • 1/2 tbsp honey (optional)

  1. In your Ninja Foodi, put the rice, carrots, peas, onions, minced garlic, 1 tbsp of the soy sauce and your water in the pot. Sauteé for 10 minutes, until the brown rice is the right texture.

  2. Add your cubed steak, ghee, rest of the soy sauce, lemon, honey and garlic powder in. Cook until steak is desired wellness (3-4 minutes for us).

  3. In the bottom of your Foodi, push the rice to the sides and create a hole in the middle for your egg. Put the egg in and let it cook.

  4. Put the Ninja Foodi crisping lid on and crisp it for 7-10 minutes, stirring occasionally throughout.

  5. Top with chopped scallions and sesame seeds.
