Paleo Artichoke Pizza

Artichoke Pizza is an iconic slice (or giant pie) of pizza in New York. So if you don’t live in the area, or you do but want to eat this pizza every day, this homemade Artichoke #skinnyswap is for you! We recreated the thick crust, the cheesy sauce, and the garlic-y artichokes and spinach.

Serving size: 1 personal pie


  • 3 bags of cauliflower rice, steamed in the microwave

  • 2 eggs

  • 1/2 tbsp oregano

  • 1/3 cup gluten-free flour

  • 1 onion, sliced and sautéed

  • 3 cups of fresh spinach, sautéed

  • 1 cup of artichokes, jarred

  • 1 glove of garlic, minced

  • 2 tbsp olive oil

  • 2 cups of cashews, soaked in water for at least 2 hours

  • salt & pepper to taste

  • 1 lemon, juiced


  1. Put your cashews in a big bowl and fill it with water. Set aside and let soak for at least 2 hours or until the cashews puff up, whiten and soften.

  2. Steam your cauliflower rice and ring out the water with a cheesecloth.

  3. Add the cauliflower, eggs, oregano, gluten-free flour and salt & pepper to a food processor and blend until your crust dough forms. Lay out on a baking sheet and bake at 425 F for 20 minutes or until the dough is firm and crispy.

  4. In a pan, sautée together your sliced onion, your garlic and a little oil.

  5. In a food processor, combine your sautéed onion and garlic with your soaked cashews to create your creamy cheese sauce. Add salt & pepper and the lemon juice and combine fully.

  6. In a pan, sautée together your artichokes and spinach with a little oil, until the spinach dwindles down and the artichokes are soft.

  7. Take your crust out of the oven, top it with the cheese sauce first. Finish it off with the artichokes and spinach and enjoy!
