Parmesan Cauliflower Balls

Talk about an addicting snack….these taste like pizza tater tots….and who doesn’t like either of those, let alone together? The cool thing about this recipe is that you can make it gluten-free with GF bread crumbs! These balls are also great for parties…but then again, which of my recipes aren’t good for parties?? Enjoy!


Serving size: 8-10 balls

  • 1 cup cauliflower florets

  • 1 cup gluten free panko bread crumbs

  • ½ cup parmesan cheese

  • Tomato sauce, scooped into 1/2 teaspoon portions and frozen

  • 2 eggs

  • Dried oregano

  • Dried basil (optional)

  • Vegetable oil (for frying)


  1. Freeze your tomato sauce scoops before starting the recipe.

  2. In a large bowl, beat the eggs with a fork.

  3. Add your cauliflower, Parmesan and bread crumbs to the eggs, and mix together until you have a dough.

  4. Take a golf ball-sized piece of dough and flatten it in the palm of your hand. Insert a ball of frozen tomato sauce inside of the dough and encase it in the dough. Roll the dough into a ball, covering the sauce inside.

  5. In a large pan, heat vegetable oil on medium-high heat, and fry the cauliflower balls until golden brown. Put on a plate to cool and serve.
