Skinny Swap: Kale Chips and Greek Yogurt Feta Tower

This skinny swap is inspired by the potato and zucchini chip stack at Fresco by Scotto, where they pour melty gorgonzola cheese over the top of the chip tower. I wanted to make a more nutritional, lighter version of the stack that you can enjoy at home.

Ingredients:

  • 1 package of kale

  • 3 tbsp olive oil

  • salt to taste

  • pepper to taste

  • 1/2 cup feta cheese

  • 1/2 cup greek yogurt

Method:

  1. Preheat your oven to 400 degrees.

  2. Lay your kale out on a baking sheet and coat them with olive oil, salt and pepper. Pop in the oven until crispy (about 30 minutes, flip throughout).

  3. In a double burner, melt the feta and greek yogurt.

  4. Stack the kale chips and pour cheese mixture on top.
