Cookie Dough Brownie Cupcakes

This is basically a brownie stuffed with cookie dough and topped with more cookie dough bites. As Hannah Montana once said, you get the best of both worlds.

Tip: if you microwave them, they get extremely gooey on the inside and it's like a cookie dough molten cake.

Serves: 6 cups



  • 1 ⅓ cup flour
  • ⅔ cup butter, softened
  • ½ cup chocolate chips
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ⅔ teaspoon vanilla extract
  • ½  teaspoon salt
  • 2 teaspoon water


  • ½ cup unsweetened cocoa powder
  • ½  cup butter, softened
  • ½  cup chocolate chips
  • 2 teaspoons vanilla extract
  • ½ cup all-purpose flour
  • 1 ½ cups white sugar
  • 1 teaspoon salt
  • 2 egg



  1. Combine all the ingredients, except for the chocolate chips and water. 

  2. Add the water and mix until the desired consistency is reached. Then add in the chocolate chips and mix evenly throughout.

3. Break off 6 1-inch balls of the dough to put in the middle of each brownie, and use the rest of the dough to make little balls to top each brownie. 


  1. Preheat the oven to 350 degrees.

  2. Beat together the melted butter and sugar until smooth and creamy. Add the egg and vanilla extract. Mix until thoroughly combined.

  3. In a separate bowl, combine the flour, cocoa powder and salt.

  4. Pour the dry mixture into the wet mixture and combine to form the brownie batter.

5. Set the brownie batter aside and make the cookie dough (recipe above).

6. Once the cookie dough is prepared, break about six 1-inch balls of cookie dough and place them in a buttered muffin pan. Add the brownie batter on top of the cookie dough until it is fully covered. Bake for 14-16 minutes.

7. Use the remaining cookie dough to make smaller chunks that you will use to top the brownie cupcakes.
